Feature Recipe: Strawberry Salad with Honey Sweet Vinaigrette

I believe that meal preparation should be as easy as possible for the active lifestyles we lead! For added protein top off this salad with chopped grilled chicken or a sliced hard boiled egg.
Strawberry Salad with Honey Sweet Vinaigrette
1 bag Dole chopped romaine lettuce
1 bag Dole baby spinach
1 pint fresh strawberries, sliced
¼ cup sliced almonds or roasted soy nuts
½ cup cheese (feta, blue, gorgonzola or skim, low fat mozzarella for a lighter taste)
Mix lettuce and spinach together in a large serving bowl; top with sliced strawberries, cheese and either sliced almonds or roasted soy nuts.
Honey Sweet Vinaigrette
2 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons honey (spray your spoon with non-stick cooking spray to make measuring your honey a breeze.)
1 clove garlic, minced or squeezed through a press
½ teaspoon salt
¼ teaspoon freshly ground black pepper
¾ cup extra virgin olive oil
Whisk all of the above ingredients together in a small mixing bowl.
Serving suggestion: Serve Honey Sweet Vinaigrette on the side and/or place small bowls with each place setting to encourage dipping in the dressing instead of pouring on the salad.
